Hey there! Just wanted to share my FAVORITE bread recipes. My first is zucchini bread. I discovered this recipe about 10 years ago with my mom, it has surely become our favorite to bake during the summer when zucchini is fresh. My mom found the recipe is a recipe book put together from a local organization. Later on, after I met my husband, I found out that this awesome recipe was actually his grandmother's! Needless to say we both LOVE this bread.

Zucchini Bread
3 beaten eggs
1 cup cooking oil
2 cups sugar
2 cups grated zucchini
2 tsp vanilla
3 cups flour
1 teaspoon cinnamon
1 teaspoon soda
½ tsp. baking powder
1 tsp. salt
½ cup chopped walnuts (optional)

Beat together first 5 ingredients. Sift together dry ingredients and add alternately. Bake 1 hour at 325 F. Makes 2 loaves. Grease and flour pans.

Another fav bread recipe of mine I got from my sister. We both like to make it around Christmas for gifts. There are many Poppy seed bread recipes but this one is great and I love the glaze.

Poppy Seed Bread
3 cups flour
2 ¼ cups sugar
1 ½ tsp salt
1 ½ tsp baking powder
3 eggs, beaten
1 ½ cups milk
1 1/8 cups cooking oil(1/8 = 2 tbsp)
1 ½ tbsp poppy seeds
1 ½ tsp almond flavor
1 ½ tsp vanilla
1 ½ butter flavor

Put all in mixing bowl and mix well. Bake in two loaf pans that have been greased and floured. Bake at 350 F until done 30 – 40 minutes or until toothpicks come our clean. Top with glaze.

Glaze
¾ cup sugar
¼ cup OJ
1 ½ tsp each almond, butter and vanilla flavors

Hope you have fun trying these recipes. If you have any suggestions for me, please feel free to share them with me.

Disclaimer

Just to let you all know a few things about this blog. First of all this is my first blog and I am just figuring things out. Also, I am not a writer or an English teacher…I am just saying that my grammar may suck, I may not always make sense, and sometimes I don’t always have my facts straight! I hope that all this does not deter you from reading anyway!!
